#Baking With Iz: Raspberry Cheesecake Brownies

Hello, people of the world! 
I decided to do this post because baking is one of the many things in my life which I love doing! So I thought I would create a new segment and call it... #BakingWithIz 

Now if you're anything like me you'll love creating new and delicious things to try out like this brownie recipe I have for you today!

YOU WILL NEED: 

200g of dark chocolate 
200g of unsalted butter (softened) 
400g of caster sugar 
5 eggs
100g of plain flour (sifted)
400g of cream cheese 
1 teaspoon of vanilla extract 
a punnet of raspberries

METHOD: 


1. Preheat your oven to 170 degrees C. Grease and line a 20 X 30cm tray. (disposable tin trays from Sainsburys work really well for this!)

2. Melt the dark chocolate in a bowl over simmering water, once melted set aside to cool slightly.

3. Cream the butter and 250g of the caster sugar until creamy and pale, then add in 3 of the eggs, one at a time and beating well after each egg.

4. Stir in the melted chocolate, then follow with folding in the flour. Spread 3/4 of the mixture into the tin. (Make sure you have more than you think you need left for the top, it's quite difficult to spread on top of the cream cheese layer!) 

5. In a separate bowl, beat the cream cheese, remaining sugar, eggs and vanilla until smooth. Then spread over the brownie mix base. 

6. Spread the remaining brownie mixture over the cream cheese layer and swirl the chocolate. Scatter or arrange the raspberries on top and bake for 40-45 minutes. 

7. Cut into squares and serve! (A little goes a long way with this brownie, it's quite filling!) 

Now sit down with a cup of tea and a slice of this beautiful brownie and relax! A perfect activity for any Sunday!
